For an 8.5″ x 11″ paper size when I click on 'Landscape' Word assumes I want an 8.5″ tall page for the booklet. When I click on 'Portrait' Word assumes a 4.25″ tall page.

Each paragraph or line in a Word document can receive its own formatting. Though a few properties -- margin size, paper size, page orientation -- apply to the entire document, individual text blocks can use their own fonts, styles, sizes and colors. You can also align each block separately. In reports and most other printed documents, it's standard to center the document's title but justify the remainder of the document's body.
To turn AutoFit off and allow text to move beyond the placeholder border, click Stop Fitting Text to This Placeholder. To turn AutoFit on, click AutoFit Text to Placeholder. To manage AutoFit options in PowerPoint for body text and title text, click Control AutoCorrect Options, and select or clear the last two options on the AutoFormat As You Type tab under Apply as you type. Note that among the three text containers in Figure 1 above, only one is a text box -- and that's placed on the bottom-right corner of the slide (which includes blue colored text). Click on the edge of the text box -- it shows a solid line along with 8 selection handles on its perimeter, as shown highlighted in red and green within Figure 2.
